It has a sweet taste and produces a cooling sensation
in the mouth. One gram dissolves in about 0.65ml of water.
It is sparingly soluble in alcohol.
Crystalline Xylitol has a melting range between 92° C
and 96° C
Identification
A The crystals melt between 195° C and 201° C
B The infrared absorption spectrum of a potassium bromide dispersion of the sample exhibits maxima only at
the same wavelength as that of a similar preparation of
FCC Xylitol Reference standard.

Description White crystals or crystalline powder. It is odorless, and has a sweet taste. It is very soluble in water, and practically insoluble in ethanol and in ether. It is hygroscopic.
Identification  
(1) The crystals melt between 195°C and 201°C.
(2) A blue-green color develops, but no turbidity is produced.
(3) The crystals melt between 61°C and 64°C.
pH 5.0-7.0

(1) Clarity and Color of Solution The solution is clear and colorless.
